These are recipes that I have picked up from over the years; some Portuguese and some American. They might not all look good, but I can assure you they all taste great!

Potato pancakes- latkes
Ingredients:
3 potatoes
3 eggs
3 tbsp of flour
1 onion (chopped)
salt
pepper
Directions:
Peel and shred the potatoes. In a bowl put the potatoes and mix in the rest of the ingredients. Spray a cookie tray and with a ice-cream scoop drop small amounts of the mixture and bake at 400 for about 25 minutes.
Chicken piccata
Ingredients:
3 lbs of chicken cutlets
flour
salt
pepper
butter
olive oil
chopped garlic
1/2 cup of white wine
1 cup of chicken broth
1/4 cup of lemon juice
4 oz of capers
Directions:
On a plate mix the flour, salt and pepper and dredge the cutlets one by one. In a frying pan melt butter and olive oil and cook the chicken for about 3 minutes on each side, do this until all the pieces are done, set aside. Using the same pan add more butter and olive oil and add the garlic and saute for about 1minute, then add the rest of the ingredients, and let it cook for a few minutes, until the sauce is a little thick, then pour over the chicken. Enjoy!

Pulled pork
Ingredients:
4 lbs of pork
1/2 cup of red wine vinegar
1/2 cup of chicken broth
1/4 cup of brown sugar
1 tbsp of mustard
1 tbsp of garlic powder
1 tbsp of onion flakes
1 tbsp of chili powder
1 onion (chopped)
4 cloves of garlic (chopped)
1 cup of barbecue sauce
1 tbsp of worcestershire sauce
Directions:
In a crock pot put the pork and pour all the ingredients on top, let it cook for 6 hours, then pull the pork and cook for 30 minutes more. Delicious!!!!
Hot chocolate
Ingredients:
2 cups of milk
1/2 cup of light cream
1 cinnamon stick
1 vanilla bean
8 oz of chocolate chips
Directions:
In a pot pour the milk, cream, cinnamon and vanilla seeds and let it boil. Brake the chocolate in pieces into a container and pour the milk mixture and mix until it melts. Serve hot!!!!!

Brownies
Ingredients:
1 lb of semi-sweet chocolate
1 lb of butter
1 1/4 lb of sugar
8 eggs
1 tsp vanilla
6 oz of flour
Directions:
Using a double boiler melt the chocolate with the butter. In a separate bowl mix the sugar with the eggs and then add vanilla and flour, mix well. Add the chocolate to the egg mixture and mix for about 3 minutes. Spray a pan with butter and pour the mixture and bake for about 30 minutes at 350. Enjoy!

Split pea soup with ham
Delicious!
Ingredients
1 ham bone
3 carrots (chopped)
2 potatoes(chopped)
2 onions (chopped)
8 cloves of garlic
1 bay leaf
olive oil
salt
pepper
1 lb of split peas
Directions:
Soak the peas in hot water for 15 minutes. In a pot with olive oil sauté the potatoes, garlic, carrots and onions for about 5 minutes, add the peas, the ham and the bay leaf and sauté for 5 more minutes . Add water ( about 1 gallon) add salt and pepper and let cook on low for 45 minutes.When all the vegetables are soft puree the soup and check for salt. Serve the soup hot and sprinkle ham (from the bone) on top.

Cuttlefish with peppers ( chocos )
Ingredients:
3 lbs of cuttlefish (clean)
2 green peppers (sliced)
6 cloves of garlic (chopped)
1 hot pepper
1 tbsp of butter
3 tbsp of olive oil
salt
Directions:
In a pot with olive oil sauté half of the garlic with the red and green peppers for about 10 minutes, then remove the peppers and set aside. Add the butter to the olive oil and put the cuttlefish, the hot pepper and the rest of the garlic, sauté for about 15 minutes and then add the peppers, add salt and cook for about 5 more minutes.
