These are recipes that I have picked up from over the years; some Portuguese and some American. They might not all look good, but I can assure you they all taste great!

Potato pancakes- latkes
Ingredients:
3 potatoes
3 eggs
3 tbsp of flour
1 onion (chopped)
salt
pepper
Directions:
Peel and shred the potatoes. In a bowl put the potatoes and mix in the rest of the ingredients. Spray a cookie tray and with a ice-cream scoop drop small amounts of the mixture and bake at 400 for about 25 minutes.

Rice with vegetables
1 1/2 cups of white rice
1 1/2 cups of water
1 cup of frozen peas
1/2 cup of frozen corn
1 carrot
1/2 onion (chopped)
4 cloves of garlic (chopped)
olive oil
Directions:
In a pot with olive oil saute the onion and garlic, then add the peeled carrot, saute for about 3 minutes and then add the rice and let if fry for about 3 minutes always stirring, add the hot water and salt. Pour in a pyrex covered with foil and cook in the oven at 350 for 30 minutes. After 30 minutest take out the rice from the oven and mix the peas and the corn and bake for 5 more minutes.Easy and delicious!

Broccoli salad
This is one of my daughter's favorite!
Ingredients:
2 bunches of raw broccoli
1/2 cup of sunflower seeds
5 tbsp of sugar
1 1/2 cups of red wine vinegar
1 1/2 cups of mayonnaise
3 ozs of bacon bits
1/2 pint of grape tomatoes cut in halves
Directions:
Wash the broccoli and cut in small pieces, put in a bowl. In another bowl mix the vinegar, mayonnaise and sugar, then add to the broccoli and mix, then add the rest of the ingredients, mix well and serve cold.
